- 2 ripe pears, peeled, cored, and chopped
- 1/4 cup crystallized ginger, chopped (optional)
Directions
- Preheat the oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg.
- In a separate bowl, combine the melted butter, granulated sugar, and brown sugar. Stir until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
