  • 2 cups all-purpose flour

  • 1/2 cup shredded coconut (optional)
  • 1 teaspoon vanilla extract
  • Cream Cheese Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or two 9-inch round cake pans.
  2. In a mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate large mixing bowl, beat together the vegetable oil, granulated sugar, brown sugar, and eggs until well combined.
  4. Stir in the grated carrots, crushed pineapple, chopped nuts (if using), shredded coconut (if using), and vanilla extract.
