Ingredients

  • 2 large russet potatoes, peeled and grated
  • 1 small onion, grated
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • Salt and pepper to taste
  • 1/2 cup Greek yogurt
  • 1/4 cup blackberry jam
  • 8 slices of bacon, cooked
  • 4 eggs, fried

Directions

  1. In a large bowl, mix together grated potatoes, grated onion, eggs, flour, baking powder, salt, and pepper to form a thick batter.
