Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 4 cloves of garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon turmeric
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups vegetable broth
  • 2 cans of artichoke hearts, drained and chopped
  • 1 can of chickpeas, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup chopped spinach
  • Juice of 1 lemon
  • Fresh parsley for garnish

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent.
  3. Add the cumin, paprika, turmeric, dried thyme, dried oregano, salt, and black pepper. Stir well to coat the onions and garlic in the spices.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Add the chopped artichoke hearts, chickpeas, diced tomatoes, and chopped spinach to the pot. Stir to combine.
  6. Cover the pot and let the stew simmer for 30 minutes, stirring occasionally.
  7. After 30 minutes, uncover the pot and squeeze in the juice of 1 lemon. Stir well.
  8. Continue simmering for another 5 minutes to allow the flavors to meld together.
  9. Serve the stew hot, garnished with fresh parsley.
