Ingredients

  • 4 medium zucchinis
  • 2 tablespoons soy sauce
  • 2 tablespoons peanut butter
  • 2 tablespoons lime juice
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 carrot, shredded
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 1/4 cup chopped peanuts
  • 2 green onions, thinly sliced

Directions

  1. Using a spiralizer, spiralize the zucchinis into noodles.
  2. In a small bowl, whisk together soy sauce, peanut butter, lime juice, rice vinegar, honey, sesame oil, and red pepper flakes.
  3. Heat vegetable oil in a large skillet over medium heat. Add bell pepper, carrot, and garlic. Cook until vegetables are tender.
  4. Push vegetables to one side of the skillet and add beaten eggs to the other side. Scramble the eggs until cooked through.
