Ingredients
- 1 lb pork tenderloin, thinly sliced
- 2 bell peppers, thinly sliced
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp sesame oil
- 1 tsp ginger, minced
- 1 tsp cornstarch
- 1/2 cup chicken broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Cooked rice, for serving
Directions
- In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, ginger, cornstarch, and chicken broth. Set aside.
- Heat 1 tbsp of vegetable oil in a large skillet or wok over high heat. Add pork slices and cook until browned, about 2-3 minutes. Remove pork from skillet and set aside.
- Add remaining 1 tbsp of vegetable oil to the skillet. Add bell peppers, onion, and garlic. Stir fry for 2-3 minutes until vegetables are tender-crisp.
- Return pork to the skillet and pour in the sauce. Cook for another 1-2 minutes until sauce thickens and pork is cooked through.
- Season with salt and pepper to taste. Serve over cooked rice and enjoy!
