Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp flour
  • Vegetable oil for frying

Directions

  1. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, cayenne pepper, salt, and pepper. Pulse until mixture is well combined but still slightly chunky.
  2. Transfer mixture to a bowl and stir in flour until mixture holds together. If too wet, add more flour as needed.
  3. Form mixture into small patties and place on a baking sheet lined with parchment paper.
  4. Heat vegetable oil in a pan over medium heat. Fry falafel cakes in batches until golden brown and crispy, about 3-4 minutes per side.
  5. Remove falafel cakes from pan and place on a paper towel-lined plate to drain excess oil.
  6. Serve falafel cakes warm with your favorite dipping sauce or in pita bread with tahini sauce, vegetables, and pickles.
