  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked brown rice (optional, for serving)

Directions

  1. In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides. Remove from the skillet and set aside.
  2. In the same skillet, cook the sliced sausage until browned. Remove from the skillet and set aside.
  3. In the slow cooker, combine the diced onion, bell pepper, celery, and garlic.
  4. Add the chicken pieces, sausage, diced tomatoes, chicken broth, Cajun seasoning, dried thyme, dried oregano, smoked paprika, cayenne pepper, salt, and black pepper to the slow cooker. Stir to combine.
  5. Cover and cook on low heat for 6 hours or high heat for 3 hours.
  6. In the last 30 minutes of cooking, add the shrimp to the slow cooker and stir to combine. Continue cooking until the shrimp are pink and cooked through.
