Ingredients
- 1 cup dried lentils
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 1 can (14 ounces) diced tomatoes
- 1 can (6 ounces) tomato paste
- 2 cups vegetable broth
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 can (14 ounces) kidney beans, drained and rinsed
- 1 can (14 ounces) black beans, drained and rinsed
- 1 cup frozen corn kernels
- Optional toppings: shredded cheese, chopped green onions, sour cream, cilantro
Directions
- Rinse lentils under cold water and drain.
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic to the pot and cook until onion becomes translucent, about 5 minutes.
- Add diced red and green bell peppers, and minced jalapeno pepper to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in diced tomatoes, tomato paste, vegetable broth, chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper (if desired).
- Add lentils, kidney beans, black beans, and frozen corn to the pot. Stir well to combine.
- Bring the chili to a boil, then reduce heat to low and simmer for 30 minutes, or until lentils are tender.
