Ingredients

  • 1 cup dried lentils
  • 2 tablespoons olive oil

  • 1 jalapeno pepper, seeded and minced
  • 1 can (14 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14 ounces) kidney beans, drained and rinsed
  • 1 can (14 ounces) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • Optional toppings: shredded cheese, chopped green onions, sour cream, cilantro

Directions

  1. Rinse lentils under cold water and drain.
  2. Heat olive oil in a large pot over medium heat.
  3. Add diced onion and minced garlic to the pot and cook until onion becomes translucent, about 5 minutes.
  4. Add diced red and green bell peppers, and minced jalapeno pepper to the pot. Cook for another 5 minutes, stirring occasionally.
  5. Stir in diced tomatoes, tomato paste, vegetable broth, chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper (if desired).
  6. Add lentils, kidney beans, black beans, and frozen corn to the pot. Stir well to combine.
  7. Bring the chili to a boil, then reduce heat to low and simmer for 30 minutes, or until lentils are tender.
