  • 2 cups grated butternut squash
  • 1 cup almond flour

  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons olive oil
  • 1 tablespoon fresh chopped parsley
  • 1 tablespoon fresh chopped chives
  • 1/2 cup grated cheddar cheese (optional)

Directions

  1. Preheat your oven to 350°F (175°C) and line a muffin tray with paper liners.
  2. In a large bowl, combine the grated butternut squash, almond flour, coconut flour, nutritional yeast, baking powder, salt, garlic powder, and black pepper. Mix well.
  3. In a separate bowl, whisk together the eggs, almond milk, and olive oil.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Stir in the fresh chopped parsley and chives.
