These Quinoa Stuffed Peppers are a perfect balance of flavors and textures, combining the nuttiness of quinoa with the sweetness of bell peppers. Packed with protein and fiber, this dish is both satisfying and healthy.


  • 4 large bell peppers
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)


  1. Preheat oven to 375°F.
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until quinoa is cooked.
  4. In a large skillet, sauté onion and garlic until translucent. Add black beans, corn, tomatoes, and spices. Cook for 5 minutes.
  5. Stir in cooked quinoa and mix well. Season with salt and pepper.
  6. Stuff each bell pepper with quinoa mixture and place in a baking dish. Top with cheese, if using.
  7. Cover with foil and bake for 25-30 minutes, until peppers are tender.
  8. Remove foil and bake for an additional 5 minutes to melt cheese.
  9. Serve hot and enjoy!
