Ingredients
- 4 large bell peppers
- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Directions
- Preheat oven to 375°F.
- Cut the tops off the bell peppers and remove seeds and membranes.
- In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until quinoa is cooked.
- In a large skillet, sauté onion and garlic until translucent. Add black beans, corn, tomatoes, and spices. Cook for 5 minutes.
- Stir in cooked quinoa and mix well. Season with salt and pepper.
- Stuff each bell pepper with quinoa mixture and place in a baking dish. Top with cheese, if using.
- Cover with foil and bake for 25-30 minutes, until peppers are tender.
- Remove foil and bake for an additional 5 minutes to melt cheese.
