Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 pound shrimp, peeled and deveined
  • ½ cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ½ cup Kalamata olives, pitted and halved
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, minced
  • 2 tablespoons fresh mint, minced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • ½ teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. In a medium saucepan, bring the water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15 minutes, or until the water is absorbed and the quinoa is tender. Remove from heat and let it cool.
  2. Meanwhile, in a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until cooked through and pink. Remove from heat and set aside.
  3. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, Kalamata olives, red onion, parsley, and mint.
