Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup pineapple juice
  • 1/4 cup rum
  • 1/4 cup coconut milk
  • 1 tsp vanilla extract
  • 1/2 cup shredded coconut
  • 1/2 cup crushed pineapple, drained
  • For the rum syrup:
  • 1/4 cup rum
  • 2 tbsp granulated sugar
  • For the coconut glaze:
  • 1 cup powdered sugar
  • 2-3 tbsp coconut milk
  • 1/2 tsp vanilla extract
  • 1/4 cup shredded coconut, for garnish

Directions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine the melted butter, pineapple juice, rum, coconut milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the shredded coconut and crushed pineapple.
  6. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the muffins are baking, prepare the rum syrup by heating the rum and sugar in a small saucepan over medium heat. Stir until the sugar has dissolved.
  9. Once the muffins are done baking, remove them from the oven and brush the rum syrup over the warm muffins.
  10. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
  11. In a small bowl, whisk together the powdered sugar, coconut milk, and vanilla extract to make the coconut glaze. Adjust the consistency by adding more coconut milk if needed.
