Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground turkey
  • 1 cup cauliflower rice
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • Fresh parsley, for garnish

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish.
  3. In a large skillet, cook the ground turkey over medium heat until browned. Drain any excess fat.
  4. Add the cauliflower rice, diced onion, minced garlic, dried oregano, ground cumin, chili powder, salt, and black pepper to the skillet. Cook for an additional 3-4 minutes until the onions are softened.
  5. Remove the skillet from heat and stir in the shredded cheddar cheese.
  6. Spoon the turkey mixture into the bell peppers, filling each pepper to the top.
  7. Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender.
  8. Remove from the oven and garnish with fresh parsley.
