Ingredients

  • 8 rice paper wrappers
  • 8 large lettuce leaves
  • 1 cup cooked rice noodles
  • 1 cup thinly sliced cucumber
  • 1 cup shredded carrots
  • 1 cup fresh herbs (such as cilantro, mint, and basil)
  • For the Thai Dipping Sauce:
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or agave syrup
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon chopped peanuts (for garnish)

Directions

  1. For the Thai Dipping Sauce:
  2. In a small bowl, whisk together the soy sauce, lime juice, rice vinegar, honey or agave syrup, minced garlic, grated ginger, and red pepper flakes. Set aside.
  3. For the Spring Rolls:
  4. Fill a large bowl with warm water. Dip one rice paper wrapper into the water and rotate it gently until it becomes soft and pliable (about 15-20 seconds).
  5. Place the softened rice paper on a clean surface.
  6. Layer a lettuce leaf on the bottom half of the rice paper.
  7. Add a small handful of rice noodles on top of the lettuce leaf.
  8. On top of the rice noodles, arrange a few slices of cucumber, shredded carrots, and fresh herbs.
  9. Fold the sides of the rice paper over the filling and tightly roll it up, similar to wrapping a burrito.
  10. Repeat the process with the remaining rice paper wrappers and filling ingredients.
  11. Serve the fresh spring rolls with the Thai dipping sauce on the side.
  12. Garnish with chopped peanuts and enjoy!
