These fresh strawberry oatmeal cookies are a perfect combination of wholesome oats and juicy strawberries. They are chewy, sweet, and packed with fruity goodness. Plus, they make for a perfect snack or dessert for any occasion.

Ingredients

  • 1 cup fresh strawberries, diced
  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Directions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
