Ingredients

  • For the crust:
  • 1 cup oats
  • 1 cup almonds
  • 10 dates, pitted
  • 2 tablespoons maple syrup
  • 1/4 teaspoon salt
  • For the filling:
  • 1 can pumpkin puree
  • 1/2 cup chia seeds
  • 1/2 cup almond milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • Optional toppings: whipped cream, pecans, cinnamon

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, combine the oats, almonds, dates, maple syrup, and salt. Process until the mixture resembles coarse crumbs.
  3. Press the crust mixture into a greased 9-inch pie dish, making sure to evenly cover the bottom and sides of the dish.
  4. Bake the crust in the preheated oven for 10 minutes, then remove and set aside to cool.
  5. In a large bowl, whisk together the pumpkin puree, chia seeds, almond milk, maple syrup, vanilla extract, cinnamon, nutmeg, and cloves until well combined.
  6. Let the filling mixture sit for 10 minutes to allow the chia seeds to absorb some of the liquid.
  7. Pour the filling into the cooled crust and spread it out evenly.
  8. Bake the pie in the oven for 30-35 minutes or until the filling is set.
  9. Remove the pie from the oven and let it cool to room temperature.
  10. Once cooled, refrigerate the pie for at least 2 hours to allow it to fully set.
  11. Serve the chia pumpkin pie chilled, and if desired, top with whipped cream, pecans, and a sprinkle of cinnamon.
