Ingredients

  • 8 ounces of firm tofu, drained and cut into cubes
  • 8 ounces of rice noodles
  • 1 tablespoon of sesame oil
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, grated
  • 1 medium carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup of snap peas, trimmed
  • 1 cup of broccoli florets
  • 2 tablespoons of soy sauce
  • 1 tablespoon of hoisin sauce
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of sriracha sauce
  • 1/4 cup of vegetable broth
  • 1 tablespoon of cornstarch
  • 2 tablespoons of water
  • 2 green onions, sliced for garnish
  • Toasted sesame seeds for garnish

Directions

  1. Boil a pot of water and cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
  3. Add the tofu cubes to the skillet and cook until lightly browned on all sides.
  4. Add the julienned carrot, sliced bell pepper, snap peas, and broccoli florets to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sriracha sauce, vegetable broth, cornstarch, and water.
  6. Pour the sauce mixture into the skillet with the tofu and vegetables. Stir well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens.
  7. Add the cooked rice noodles to the skillet and toss gently to combine everything together.
  8. Remove from heat and garnish with sliced green onions and toasted sesame seeds.
