Ingredients

  • 1 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons vegetable oil
  • 1/4 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1/2 cup pineapple chunks
  • 1/2 cup bell peppers, cut into chunks
  • 1/4 cup chopped green onions (for garnish)

Directions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground pork, breadcrumbs, milk, onion, bell pepper, garlic, soy sauce, rice vinegar, brown sugar, ginger powder, salt, black pepper, and red pepper flakes. Mix well until all ingredients are evenly incorporated.
  3. Shape the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  4. Bake the meatballs in the preheated oven for 20 minutes, or until cooked through and golden brown.
  5. While the meatballs are baking, prepare the sweet and sour sauce. In a small saucepan, heat vegetable oil over medium heat. Add ketchup, apple cider vinegar, brown sugar, and soy sauce. Stir well to combine.
  6. Add pineapple chunks and bell peppers to the saucepan and simmer for 5 minutes, until the sauce thickens slightly.
  7. Remove the meatballs from the oven and transfer them to a serving dish. Pour the sweet and sour sauce over the meatballs, coating them evenly.
  8. Garnish with chopped green onions and serve hot. Enjoy!
