- 3 pounds beef short ribs
- 1 cup soy sauce

- 2 carrots, sliced
- 3 potatoes, cut into chunks

Directions
- In a large bowl, combine soy sauce, brown sugar, rice wine, sesame oil, minced garlic, and minced ginger. Mix well until the sugar is dissolved.
- Add the beef short ribs to the marinade and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
- In a large pot or Dutch oven, heat some oil over medium heat. Remove the short ribs from the marinade, reserving the marinade for later. Sear the short ribs in batches until browned on all sides. Remove and set aside.
- In the same pot, add the sliced onion and cook until softened and translucent. Add the carrots and potatoes, and cook for a few minutes.
