Ingredients

  • 4 large portobello mushrooms
  • 4 boneless, skinless chicken breasts
  • 2 lemons, juiced
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the portobello mushrooms and remove the stems. Place the mushrooms on a baking sheet.
  3. In a small bowl, whisk together the lemon juice, minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper.
  4. Pour the marinade over the mushrooms and let them marinate for 15 minutes, flipping them halfway through.
  5. In the meantime, pound the chicken breasts to an even thickness using a meat mallet or rolling pin.
  6. Remove the mushrooms from the marinade, reserving the remaining marinade.
  7. Stuff each mushroom with a chicken breast and place them back on the baking sheet.
  8. Pour the remaining marinade over the stuffed mushrooms.
  9. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the mushrooms are tender.
