Ingredients

  • 8 large tortillas
  • 8 large eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1 tablespoon vegetable oil

Directions

  1. In a large bowl, whisk together the eggs, salt, black pepper, garlic powder, and cumin.
  2. Heat the oil in the Instant Pot using the sauté function. Add the bell peppers and onions, and cook until they soften.
  3. Add the diced tomatoes and bacon to the Instant Pot, and sauté for another minute.
  4. Pour the egg mixture into the Instant Pot and stir well. Cook for 2-3 minutes, or until the eggs are just set.
  5. Remove the Instant Pot insert and let the mixture cool slightly.
  6. Fill each tortilla with a scoop of the egg mixture, sprinkle with shredded cheese and chopped cilantro.
  7. Fold in the sides of the tortilla, then roll it up tightly.
  8. Wrap each burrito individually in aluminum foil.
  9. Optionally, place the burritos in a large resealable freezer bag for extra protection.
  10. To cook the frozen burritos, place them in the Instant Pot with 1 cup of water and select the 'Manual' or 'Pressure Cook' function for 5 minutes.
  11. Allow the Instant Pot to naturally release pressure for 5 minutes, then do a quick release.
