Ingredients

- Saffron strands soaked in milk
Directions
- Marinate the lamb pieces in yogurt, ginger-garlic paste, salt, red chili powder, and turmeric powder for 1 hour.
- In a large pot, heat ghee and oil. Add the sliced onions and cook until golden brown.
- Add the marinated lamb pieces and cook until browned. Add tomatoes and cook until they soften.
- Add whole spices, garam masala, and salt. Cook for a few minutes.
- In a separate pot, boil water and add soaked rice. Cook until 70% done.
- Layer the cooked lamb masala over the rice. Top with fried onions, saffron milk, and chopped mint and coriander leaves.
- Cover and cook on low heat for 30 minutes or until the rice is fully cooked and the flavors have melded together.
- Serve hot with raita and salad.
