  • 1 onion, thinly sliced
  • 4 cloves of garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Directions

  1. Prepare the tofu by draining and pressing it to remove excess moisture. Cut the tofu into bite-sized cubes.
  2. Heat olive oil in a large skillet over medium heat. Add the tofu cubes and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.

  5. Pour in coconut milk, vegetable broth, and soy sauce. Stir and bring the mixture to a gentle simmer.
  6. Return the tofu to the skillet and let it simmer in the sauce for about 10 minutes, allowing the flavors to meld together.
