Ingredients

  • For the cookies:
  • 2 ½ cups all-purpose flour

  • 2 cups confectioners' sugar
  • 2-3 tablespoons milk

Directions

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined.
  3. Gradually add the flour mixture to the butter mixture, mixing until a soft dough forms. Divide the dough into two equal portions, wrap each in plastic wrap, and refrigerate for at least 1 hour.
  4. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  5. Roll out one portion of dough on a lightly floured surface to a thickness of about ¼ inch. Use a round cookie cutter to cut out about 24 cookies. Place the cut-out cookies onto the prepared baking sheets, spacing them about an inch apart.
  6. Bake the cookies for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  7. Repeat the rolling, cutting, and baking process with the remaining portion of dough.
  8. To make the red icing, in a medium bowl, whisk together the confectioners' sugar and milk until smooth and well combined. Add a few drops of red food coloring and mix until the desired shade of red is achieved. If necessary, add more milk or sugar to adjust the consistency of the icing.
