Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 can (14 ounces) crushed tomatoes
  • Salt and pepper, to taste
  • 4-6 large eggs
  • Fresh parsley, chopped, for garnish

Directions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, and cook until softened, about 5 minutes.
  2. Add the minced garlic, cumin, paprika, and cayenne pepper (if using), and cook for an additional minute.
  3. Pour in the crushed tomatoes and season with salt and pepper. Bring the mixture to a simmer and let it cook for about 10-15 minutes, until the sauce has thickened.
  4. Using a spoon, make small wells in the sauce and crack an egg into each well. Cover the skillet with a lid and cook for about 5-7 minutes, or until the eggs are cooked to your liking.
  5. Remove the skillet from heat and garnish with fresh parsley. Serve the shakshuka hot with crusty bread.
