Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 1 red bell pepper, diced

- 1/2 teaspoon cayenne pepper (optional)
- 1 can (14 ounces) crushed tomatoes
- Salt and pepper, to taste
- 4-6 large eggs
- Fresh parsley, chopped, for garnish

- In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, and cook until softened, about 5 minutes.
- Add the minced garlic, cumin, paprika, and cayenne pepper (if using), and cook for an additional minute.
- Pour in the crushed tomatoes and season with salt and pepper. Bring the mixture to a simmer and let it cook for about 10-15 minutes, until the sauce has thickened.
