Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract

Directions

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. Gradually add the flour and salt, mixing until a dough forms.
  4. Divide the dough in half and mix cocoa powder into one half until combined.
  5. Shape each half into a rectangle and chill in the refrigerator for 30 minutes.
  6. Roll out each dough rectangle into a 1/4 inch thickness.
  7. Stack the dough rectangles on top of each other, alternating the colors.
  8. Roll up the stacked dough lengthwise into a log.
  9. Chill the log in the refrigerator for 30 minutes.
  10. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  11. Slice the log into 1/4 inch thick rounds and place them on the prepared baking sheet.
  12. Bake for 10-12 minutes or until the edges are lightly golden.
  13. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
