Ingredients

  • 1 lb sea scallops
  • 1 cup Israeli couscous
  • 2 cups chicken or vegetable broth
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions

  1. Rinse the scallops and pat dry with paper towels. Season with salt and pepper.
