Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, diced
  • 2 cloves garlic, minced

  • 1 cup shredded cheddar cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove the seeds and white membranes. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until the onion is soft and translucent.
  4. Add the ground beef to the skillet and cook until browned. Drain any excess grease.
  5. Stir in the cooked rice, diced tomatoes, dried oregano, dried basil, salt, and pepper. Cook for an additional 5 minutes, until heated through.
  6. Remove the skillet from the heat and stir in half of the shredded cheddar cheese.
  7. Stuff each bell pepper with the beef and rice mixture, packing it tightly. Place the stuffed peppers in a baking dish.
  8. Sprinkle the remaining shredded cheddar cheese over the top of each stuffed pepper.
  9. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  10. Remove the foil and continue baking for an additional 10 minutes, until the cheese is melted and golden brown.
  11. Remove from the oven and let the stuffed peppers cool for a few minutes before serving.
  12. Serve the stuffed peppers hot and enjoy!
