Ingredients
- 4 large bell peppers (any color)
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes, drained
- 1 cup shredded cheddar cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 tablespoon olive oil
Directions
- Preheat your oven to 375°F (190°C).
- Cut off the tops of the bell peppers and remove the seeds and white membranes. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until the onion is soft and translucent.
- Add the ground beef to the skillet and cook until browned. Drain any excess grease.
- Stir in the cooked rice, diced tomatoes, dried oregano, dried basil, salt, and pepper. Cook for an additional 5 minutes, until heated through.
- Remove the skillet from the heat and stir in half of the shredded cheddar cheese.
- Stuff each bell pepper with the beef and rice mixture, packing it tightly. Place the stuffed peppers in a baking dish.
- Sprinkle the remaining shredded cheddar cheese over the top of each stuffed pepper.
- Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
- Remove the foil and continue baking for an additional 10 minutes, until the cheese is melted and golden brown.
