Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup vegetable shortening
- 1/4 cup ice water
- 6-8 medium peaches, peeled and sliced
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 egg, beaten
Directions
- In a large mixing bowl, combine the flour and salt. Add the cold butter and vegetable shortening. Use a pastry cutter or your hands to cut the butter and shortening into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, a tablespoon at a time, while mixing the dough with a fork. Continue adding water until the dough comes together and can be formed into a ball. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- In a separate mixing bowl, combine the sliced peaches, granulated sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss until the peaches are evenly coated with the sugar mixture.
- Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Place the rolled-out dough in the pie dish and trim any excess dough hanging over the edges.
- Pour the peach filling into the pie crust, spreading it out evenly.
- Roll out the remaining dough to create a lattice pattern on top of the pie. Alternatively, you can cover the pie with a full crust, cutting slits to allow steam to escape.
- Brush the top crust with beaten egg to create a golden brown finish.
- Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
- Remove the pie from the oven and let it cool for at least 1 hour before serving. This will allow the filling to set.
- Serve the French Peach Pie on its own or with a scoop of vanilla ice cream for a delicious treat.
