Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup vegetable shortening
  • 1/4 cup ice water
  • 6-8 medium peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 egg, beaten

Directions

  1. In a large mixing bowl, combine the flour and salt. Add the cold butter and vegetable shortening. Use a pastry cutter or your hands to cut the butter and shortening into the flour until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, a tablespoon at a time, while mixing the dough with a fork. Continue adding water until the dough comes together and can be formed into a ball. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In a separate mixing bowl, combine the sliced peaches, granulated sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss until the peaches are evenly coated with the sugar mixture.
  5. Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Place the rolled-out dough in the pie dish and trim any excess dough hanging over the edges.
  6. Pour the peach filling into the pie crust, spreading it out evenly.
  7. Roll out the remaining dough to create a lattice pattern on top of the pie. Alternatively, you can cover the pie with a full crust, cutting slits to allow steam to escape.
