This Aztec Casserole combines the flavors of traditional Mexican cuisine with the ease of a casserole dish. Layers of corn tortillas, seasoned ground beef, black beans, corn, and cheese come together for a hearty and satisfying meal that the whole family will love. Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 12 corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Optional toppings: sliced avocado, sour cream, fresh cilantro

Directions

  1. Preheat oven to 375°F.
  2. In a large skillet, cook ground beef over medium heat until browned. Add onion and garlic, and cook until onion is soft.
  3. Stir in black beans, corn, diced tomatoes, cumin, chili powder, paprika, salt, and pepper. Cook for an additional 5 minutes.
  4. In a 9x13 inch baking dish, spread a thin layer of the meat mixture. Top with a layer of tortillas, tearing them to fit if needed. Repeat layers, ending with a layer of meat mixture.
  5. Top casserole with shredded cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is melted and bubbly.
  7. Let the casserole cool slightly before serving. Top with sliced avocado, sour cream, and fresh cilantro if desired.
