Ingredients

  • 1 large head of cabbage
  • 1 pound ground beef
  • 1 cup cooked white rice
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup beef broth

Directions

  1. Preheat oven to 350°F.
  2. Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for about 3-5 minutes or until the outer leaves start to soften. Remove the cabbage from the water and carefully peel off the softened leaves. Set aside.
  3. In a large skillet, cook the ground beef over medium heat until browned. Add the onion, garlic, thyme, paprika, salt, and pepper. Cook for another 5 minutes until the onions are soft.
  4. Remove the skillet from heat and stir in the cooked rice.
  5. To assemble the cabbage rolls, place a spoonful of the beef and rice mixture onto each cabbage leaf. Roll up the leaf, tucking in the sides as you go, and place seam side down in a baking dish.
  6. In a bowl, mix together the diced tomatoes, tomato sauce, and beef broth. Pour the mixture over the cabbage rolls in the baking dish.
  7. Cover the baking dish with foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes until the sauce is bubbly and the cabbage is tender.
