Ingredients

  • 1 pound fresh scallops
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the scallops under cold water and pat them dry with paper towels.
  3. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Increase the heat to high and add the scallops to the skillet. Sear them on each side for about 2 minutes until lightly browned. Remove the scallops from the skillet and set them aside.
  5. Deglaze the skillet with the white wine, scraping up any browned bits from the bottom. Cook for 2-3 minutes until the wine has reduced by half.
  6. Reduce the heat to medium and add the heavy cream to the skillet. Stir in the grated Parmesan cheese and season with salt and pepper. Cook for 2-3 minutes until the sauce thickens slightly.
  7. Place the seared scallops in a baking dish and pour the creamy sauce over them.
  8. In a small bowl, combine the breadcrumbs with a tablespoon of melted butter. Sprinkle the breadcrumb mixture over the scallops.
  9. Bake in the preheated oven for 15-20 minutes until the scallops are cooked through and the breadcrumb topping is golden brown and crispy.
  10. Remove from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley before serving.
