Ingredients

  • 1 bunch fresh asparagus
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk or heavy cream
  • Salt and pepper to taste
  • Croutons, fresh herbs, or grated Parmesan cheese for garnish

Directions

  1. Wash the asparagus spears thoroughly and trim off the tough ends.
  2. Cut the asparagus into small pieces, reserving a few whole spears for garnish.
  3. In a large pot, heat the olive oil over medium heat.
  4. Add the chopped onion and minced garlic. Cook until the onion becomes translucent and fragrant.
  5. Add the asparagus pieces to the pot and sauté for a few minutes.
  6. Pour in the vegetable broth and bring the mixture to a boil.
  7. Reduce the heat, cover the pot, and simmer for about 15-20 minutes until the asparagus is tender.
  8. Using an immersion blender or a regular blender, puree the soup until smooth and creamy.
  9. Return the soup to the pot and stir in the milk or heavy cream.
  10. Season with salt and pepper to taste.
  11. Simmer for a few more minutes to heat through.
  12. While the soup is simmering, steam the reserved asparagus spears until they are crisp-tender.
  13. Remove the soup from heat and ladle it into bowls.
  14. Garnish each bowl with a few steamed asparagus spears and optionally add croutons, fresh herbs, or grated Parmesan cheese on top.
  15. Serve the fresh asparagus soup hot and enjoy!
