Ingredients

  • 1 package (9 ounces) no-boil lasagna noodles
  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach, chopped

  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and set aside.
  4. In a separate bowl, combine the shredded chicken, alfredo sauce, salt, and black pepper. Mix well.
  5. Spread a thin layer of the chicken and alfredo sauce mixture on the bottom of a 9x13-inch baking dish.
  6. Place a layer of lasagna noodles on top of the sauce, covering the entire bottom of the dish. Break noodles if needed to fit.
  7. Spread half of the spinach mixture evenly over the noodles.
  8. Sprinkle half of the mozzarella and Parmesan cheeses over the spinach.
  9. Repeat the layers: chicken and alfredo sauce mixture, lasagna noodles, spinach mixture, and cheeses.
  10. Top with a final layer of lasagna noodles and sprinkle with remaining cheese.
  11. Cover the baking dish with aluminum foil and bake for 30 minutes.
  12. Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is golden and bubbly.
  13. Remove from the oven and let the lasagna rest for 10 minutes before serving.
  14. Garnish with chopped fresh basil before serving, if desired.
