Slow-Cooker Pork Green Chili
Ingredients
2 live lobsters, about 1 1/2 to 2 pounds each
1 cup all-purpose flour
2 teaspoons garlic powder
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
2 eggs, lightly beaten
1 cup panko bread crumbs
1/2 cup vegetable oil, for frying
Directions
Fill a large pot with enough water to cover the lobsters. Bring the water to a boil over high heat.
Carefully add the lobsters to the boiling water and cover the pot. Cook the lobsters for 8 minutes.
Remove the lobsters from the pot and allow them to cool. Once cooled, break the body of the lobster from the tail.
In a shallow bowl, mix together the flour, garlic powder, paprika, oregano, salt, and pepper.
In a separate bowl, beat the eggs until well combined.
In a third bowl, pour the panko bread crumbs.
Dip each lobster piece in the flour mixture, then the egg mixture, then the panko crumbs. Make sure to coat each piece well.
Heat the oil in a large skillet over medium-high heat.
Carefully add the lobster pieces to the hot oil and fry until golden brown, about 3 minutes per side.
Remove the lobster from the oil and drain on a paper towel-lined plate.
Serve the lobster with your favorite dipping sauce.
