Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 3/4 cup lightly packed light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup raisins

Directions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground ginger.
  3. In a large bowl, beat together the butter and brown sugar with an electric mixer until light and fluffy.
  4. Add the egg and vanilla and mix until combined.
  5. Add the flour mixture and mix until just combined.
  6. Stir in the coconut, oats, and raisins.
  7. Drop the dough onto the prepared baking sheets in 2-tablespoon mounds, about 2 inches apart.
  8. Bake for 12-14 minutes, or until lightly golden.
  9. Let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
