Ingredients

  • 8 oz (225g) semisweet or bittersweet chocolate, finely chopped
  • 1/2 cup (120ml) heavy cream
  • 2 tbsp (30g) unsalted butter, softened

  • 1/4 cup (30g) cocoa powder, for coating

Directions

  1. In a heatproof bowl, add the chopped chocolate.
  2. In a small saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat.
  3. Pour the hot cream over the chopped chocolate. Allow it to sit undisturbed for 1-2 minutes.
  4. Gently stir the chocolate and cream together until smooth and well combined.
  5. Add the softened butter and vanilla extract to the chocolate mixture. Stir until the butter is fully incorporated.
  6. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until the mixture is firm.
  7. Line a baking sheet with parchment paper or silicone mat.
  8. Using a small cookie scoop or a teaspoon, portion out the chilled chocolate mixture and roll it into small balls between your palms.
  9. Place the cocoa powder in a shallow dish. Roll each truffle in the cocoa powder until completely coated.
  10. Transfer the coated truffles to the prepared baking sheet.
  11. Refrigerate the truffles for an additional 30 minutes to firm up.
  12. Once firm, transfer the truffles to an airtight container and store in the refrigerator.
