  • 3/4 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 package instant chocolate pudding
  • 2 cups cold milk
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • 1/2 cup unsalted butter

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Mix well until smooth.
  4. Stir in the boiling water, gradually mixing it into the batter. The batter will be thin but that's okay.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. In a separate bowl, prepare the instant chocolate pudding according to the package instructions, using the 2 cups of cold milk.
  7. Pour the prepared pudding evenly over the cake batter in the pan.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. While the cake is cooling, prepare the fudge sauce. In a small saucepan, melt the butter and chocolate chips over low heat, stirring until smooth.
  10. Remove the saucepan from heat and stir in the powdered sugar and vanilla extract. Let the fudge sauce cool slightly.
  11. In a chilled mixing bowl, whip the heavy cream until soft peaks form. Gradually add the fudge sauce and continue whipping until stiff peaks form.
  12. Spread the fudge sauce mixture over the cooled cake and refrigerate for at least 1 hour before serving.
