Ingredients

  • 1 (4-5 pound) pork shoulder roast
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 6 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup water
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried oregano
  • 1 tablespoon cracked black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Directions

  1. Preheat your oven to 300°F (150°C).
  2. Season the pork roast generously with salt and black pepper on all sides.
  3. Heat vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat.
  4. Add the pork roast to the pot and sear it until browned on all sides, about 5 minutes per side. Remove the roast from the pot and set aside.
  5. In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 5 minutes.
  6. Pour beef broth, water, Worcestershire sauce, Dijon mustard, dried thyme, dried rosemary, dried oregano, and cracked black pepper into the pot. Stir well to combine.
  7. Return the pork roast to the pot and bring the liquid to a simmer. Cover the pot with a lid and transfer it to the preheated oven.
  8. Allow the pork roast to cook in the oven for about 4 hours, or until it's tender and falling apart.
  9. Once the pork is cooked, carefully remove it from the pot and transfer it to a cutting board. Let it rest for a few minutes.
  10. Meanwhile, place the pot with the cooking liquid on the stovetop over medium heat. In a small bowl, mix cornstarch and cold water until well combined to make a slurry.
  11. Slowly whisk the slurry into the cooking liquid, stirring constantly until the gravy thickens. Taste and adjust seasoning if needed.
  12. To serve, slice or shred the pork roast and pour the cracked pepper gravy over the top. Enjoy it with mashed potatoes or buttered noodles.
