Learn how to make foolproof potato latkes that are crispy on the outside and tender on the inside. This traditional Jewish dish is perfect for Hanukkah or any other occasion. With a few simple ingredients, you can create a batch of these delicious potato pancakes that will delight your family and friends. Serve them hot with applesauce or sour cream for a truly satisfying treat.

Ingredients

  • 4 large potatoes
  • 1 small onion
  • 2 eggs
  • ¼ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • Vegetable oil for frying

Directions

  1. Peel the potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.
  2. Peel and grate the onion. Add it to the grated potatoes.
  3. In a large bowl, beat the eggs. Add the flour, salt, and pepper. Mix well.
  4. Add the grated potato and onion mixture to the egg mixture. Stir until well combined.
  5. In a large skillet, heat about ¼ inch of vegetable oil over medium heat.
  6. Drop spoonfuls of the potato mixture into the hot oil, flattening them with the back of a spoon to form pancakes.
  7. Cook the latkes for about 3-4 minutes on each side, or until golden brown and crispy.
  8. Remove the latkes from the pan and place them on a paper towel-lined plate to drain excess oil.
  9. Repeat the process with the remaining potato mixture, adding more oil to the pan as needed.
  10. Serve the potato latkes hot with applesauce or sour cream. Enjoy!
