  • 2 pounds of Yukon gold potatoes

  • 1/2 cup of unsweetened almond milk

Directions

  1. Peel and chop the potatoes into 1-inch pieces. Rinse them thoroughly and place them in a large pot.
  2. Fill the pot with enough water to cover the potatoes. Add a generous pinch of salt and bring to a boil.
