Ingredients
- 2 ripe mangoes, peeled and diced
- 1 can of coconut milk

- 1 teaspoon of lime juice
Directions
- In a medium saucepan over medium heat, add the diced mangoes and coconut milk. Stir to combine and bring to a simmer.
- Add in the sugar and lime juice. Stir to combine and simmer for 15 minutes, stirring occasionally.
- Remove from the heat and let cool for 10 minutes.
- Transfer the mixture to a blender and blend until smooth.
- Pour the pudding into individual servings and refrigerate for at least 2 hours before serving.
