Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1 can of coconut milk
  • 2 tablespoons of sugar
  • 1 teaspoon of lime juice

Directions

  1. In a medium saucepan over medium heat, add the diced mangoes and coconut milk. Stir to combine and bring to a simmer.
  2. Add in the sugar and lime juice. Stir to combine and simmer for 15 minutes, stirring occasionally.
  3. Remove from the heat and let cool for 10 minutes.
  4. Transfer the mixture to a blender and blend until smooth.
  5. Pour the pudding into individual servings and refrigerate for at least 2 hours before serving.
