Ingredients
- 2 pounds boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup chopped fresh cilantro
- 1 jalapeno pepper, seeded and chopped
- 1 lime, juiced
- Cooked rice or naan bread, for serving
Directions
- In a large bowl, combine the cumin, paprika, cayenne pepper, salt, and black pepper. Add the chicken breasts and toss to coat evenly. Let them marinate for at least 30 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the marinated chicken breasts and cook until they are browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Add the chicken broth, scraping the bottom of the skillet to release any browned bits. Bring the broth to a simmer and cook for 5 minutes.
- Reduce the heat to low and add the heavy cream, chopped cilantro, jalapeno pepper, and lime juice. Stir until well combined.
- Return the chicken to the skillet, along with any juices that have accumulated. Cover the skillet and let the chicken simmer in the creamy sauce for 10-15 minutes, or until it is cooked through and the sauce has thickened.
- Serve the creamy cilantro chicken over cooked rice or with naan bread. Garnish with additional chopped cilantro if desired. Enjoy!
