Ingredients

  • 12 oz penne pasta
  • 1 lb asparagus, trimmed and cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 shallot, chopped
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1 cup heavy cream
  • 8 oz brie cheese, rind removed and cut into small pieces
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 2 tbsp butter, melted
  • Fresh parsley for garnish

Directions

  1. Preheat the oven to 375°F and grease a 9x13 inch baking dish.
  2. Cook the pasta according to package instructions, adding the asparagus to the pot during the last 2 minutes of cooking. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the shallot and garlic, and cook until softened.
  4. Add the white wine and cook until reduced by half.
  5. Stir in the heavy cream and bring to a simmer.
  6. Add the brie cheese and stir until melted and smooth.
  7. Add the cooked pasta and asparagus to the skillet and toss to coat in the sauce.
