Ingredients

  • 1.5 lbs beef sirloin, thinly sliced
  • 1 onion, diced
  • 8 oz sliced mushrooms
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 cup sour cream
  • 1/4 cup flour
  • Salt and pepper, to taste
  • Cooked egg noodles, for serving
  • Fresh parsley, chopped, for garnish

Directions

  1. Turn Instant Pot to sauté mode and add some oil.
  2. Sauté beef until browned, then add onions, mushrooms, and garlic.
  3. Stir in beef broth, tomato paste, Worcestershire sauce, and Dijon mustard.
  4. Lock lid on Instant Pot and cook on high pressure for 12 minutes.
  5. Quick release pressure and stir in sour cream mixed with flour to thicken.
  6. Season with salt and pepper.
  7. Serve over cooked egg noodles and garnish with fresh parsley.
