Ingredients

  • 1 box of elbow macaroni
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 cup salsa
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups Velveeta cheese, cubed
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup bread crumbs

Directions

  1. Cook the macaroni according to the package instructions. Drain and set aside.
  2. In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute to make a roux.
  3. Gradually pour in the milk, whisking constantly to avoid any lumps. Cook until the mixture starts to thicken.
  4. Stir in the salsa, salt, and black pepper. Cook for an additional 2 minutes.
  5. Reduce the heat to low. Add the Velveeta cheese, shredded cheddar cheese, and grated Parmesan cheese. Stir until the cheese melts and the sauce is smooth and creamy.
  6. Remove the saucepan from the heat and add the cooked macaroni. Stir well to coat the macaroni with the cheese sauce.
