Ingredients
- 1 box of elbow macaroni
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/2 cup salsa
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups Velveeta cheese, cubed
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup bread crumbs
Directions
- Cook the macaroni according to the package instructions. Drain and set aside.
- In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute to make a roux.
- Gradually pour in the milk, whisking constantly to avoid any lumps. Cook until the mixture starts to thicken.
- Stir in the salsa, salt, and black pepper. Cook for an additional 2 minutes.
- Reduce the heat to low. Add the Velveeta cheese, shredded cheddar cheese, and grated Parmesan cheese. Stir until the cheese melts and the sauce is smooth and creamy.
- Remove the saucepan from the heat and add the cooked macaroni. Stir well to coat the macaroni with the cheese sauce.
