- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup arborio rice
- 1/2 cup dry white wine (optional)

- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup packed fresh spinach leaves
- 1/2 cup grated Parmesan cheese
Directions
- Set the Instant Pot to 'Saute' mode and heat the olive oil.
- Add the diced onion and minced garlic to the pot and sauté until translucent.
- Add the arborio rice and stir well to coat the grains with oil.
- If using, pour in the dry white wine and stir until absorbed by the rice.
- Add the vegetable broth, diced tomatoes (with their juice), dried basil, dried oregano, salt, and black pepper to the pot. Stir well to combine.
