Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • Optional toppings: bacon bits, chopped chives, sour cream

Directions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic. Cook for 3-4 minutes, until the onion is translucent.
  2. Add the diced potatoes, thyme, salt, and black pepper to the pot. Stir to coat the potatoes with the butter and onion mixture.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Using a slotted spoon, remove about half of the cooked potatoes from the pot and set them aside. Use an immersion blender or a regular blender to puree the remaining potatoes and broth until smooth.
  5. Return the pureed potatoes and the reserved cooked potatoes to the pot. Stir in the milk and bring the soup back to a simmer.
  6. In a separate small saucepan, melt the remaining butter over medium heat. Stir in the flour to create a roux. Cook the roux for 1-2 minutes, stirring constantly.
  7. Gradually whisk in about 1/2 cup of the hot soup into the roux to temper it. Slowly pour the roux mixture back into the pot of soup, whisking constantly.
  8. Continue cooking the soup over low heat for an additional 5 minutes, or until it has thickened slightly.
  9. Stir in the shredded cheddar cheese until melted and well combined. Taste and adjust seasoning if necessary.
  10. Serve the potato soup hot, topped with optional toppings such as bacon bits, chopped chives, and sour cream.
