This potato and broccoli casserole is the perfect combination of creamy, cheesy, and flavorful. It's a great side dish or a main course for a vegetarian meal. It's easy to make and will surely be a hit with the whole family.

Ingredients

  • 4 cups diced potatoes
  • 2 cups broccoli florets
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F.
  2. Boil the potatoes in a pot of salted water until tender. Drain and set aside.
  3. In a skillet, melt the butter and sauté the onions and garlic until fragrant.
  4. Add the flour and stir to make a roux. Gradually whisk in the milk until smooth and thickened.
  5. Stir in half of the cheese and season with salt and pepper.
  6. In a baking dish, layer half of the potatoes and broccoli. Pour half of the cheese sauce over the top. Repeat with remaining potatoes, broccoli, and cheese sauce.
  7. Sprinkle the remaining cheese on top.
  8. Bake for 25-30 minutes until bubbly and golden brown.
  9. Serve hot and enjoy!
